Busted with his hands in the cookie jar!

We made these yummy, yummy cookies yesterday. It’s the easiest recipe and so delicious, it’s from the ‘Coming Home to Eat – Wholefood for the Family book by Jude Blereau. The secret is that we use maple syrup instead of sugar. It’s perfect for Little Man because they have no egg, so no worries for his allergy.

I adapted the original recipe slightly, here’s how we made them;

What you need
150g rolled oats
150g whole almonds
125g flour (plain, wholemeal or spelt – whatever you have)
1/4 tsp baking powder
225g choc chips
125ml light extra virgin olive oil
125ml maple syrup
2 teaspoons vanilla extract

How you make them
1. Toast almonds and rolled oats for a few minutes in the oven
2. Grind almonds and oats in food processor, make them as coarse or as fine as you like
3. In a big bowl mix the dry ingredients
4. In a seperate bowl mix the wet ingredients, then add to the dry and combine
5. With your hands roll little bite sized cookies and flatten them with a fork
6. Bake for ten minutes in a 180 degree oven

They won’t last long, so I suggest you double the recipe!
